Ingredients

  • 240 g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Zest of 1 orange
  • Pinch of salt
  • 100 g brown sugar
  • 100 g white sugar
  • 118 ml fresh orange juice
  • 118 g vegetable oil
  • 177 ml hot water

METHOD

  1. Preheat oven to 170–180°C. Grease and line a cake tin.
  2. Sift flour, baking powder, baking soda, and salt.
  3. Rub orange zest into dry ingredients.
  4. In another bowl, mix sugars, orange juice, oil, and hot water.
  5. Combine wet and dry ingredients gently.
  6. Pour batter into tin.
