- 240 g all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- Zest of 1 orange
- Pinch of salt
- 100 g brown sugar
- 100 g white sugar
- 118 ml fresh orange juice
- 118 g vegetable oil
- 177 ml hot water
METHOD
- Preheat oven to 170–180°C. Grease and line a cake tin.
- Sift flour, baking powder, baking soda, and salt.
- Rub orange zest into dry ingredients.
- In another bowl, mix sugars, orange juice, oil, and hot water.
- Combine wet and dry ingredients gently.
