Ingredients

For the Brownie Layer

  • 1 cup butter

  • 1½ cups sugar

  • 1 cup curd

  • 1 tsp vanilla

  • 2 tsp vinegar

  • 2 cups flour

  • ¼ cup cocoa powder

  • 3 tsp red food colour

For the Cheesecake Layer

  • 1½ cups cream cheese

  • ½ cup condensed milk

  • 1 tsp vanilla

  • 1½ tbsp cornflour

METHOD

    1. Preheat oven to 180°C. Line an 8-inch square pan with parchment paper.

    2. Mix flour and cocoa together and set aside.

    3. Cream butter and sugar until light and fluffy.

    4. Add curd, vanilla, and vinegar. Mix well.

    5. Fold in the dry ingredients and red food colour.

    6. Reserve ½ cup batter. Spread remaining batter into prepared pan.

    7. Whisk cheesecake ingredients until smooth.

    8. Pour cheesecake layer over brownie batter.

    9. Add spoonfuls of reserved batter and swirl using a skewer.

    10. Bake 40–45 minutes.

    11. Chill for 1 hour before slicing.
