Ingredients

For the Cheesecake Filling

  • ½ cup Cream Cheese (softened)
  • ½ cup Fresh Cream
  • ¼ cup Sugar
  • 2 tbsp Thandai Masala
  • 1 tsp Rose Water
  • ½ tsp Vanilla Extract
  • 2 tbsp Hot Milk
  • ¼ tsp Saffron Strands

 

For the Base

  • Digestive Biscuits
  • 1 tbsp Melted Butter

METHOD

For the Base

  1. Add the digestive biscuits to a blender and pulse until they reach a fine, sand-like consistency.
  2. Transfer the biscuit crumbs to a bowl and add melted butter. Mix until the texture resembles wet sand.
  3. Press the mixture firmly onto the base of a cake tin and keep aside while preparing the filling.

For the Cheesecake Filling

  1. Add saffron strands to hot milk and let it rest for 15 minutes to allow the flavours to infuse.
  2. In a mixing bowl, combine softened cream cheese, sugar, rose water, and vanilla extract. Whisk for 2–3 minutes until smooth and creamy.
  3. Add the thandai masala and prepared saffron milk mixture. Mix well until fully incorporated.
  4. In a separate bowl, whip the fresh cream until stiff peaks form.
  5. Gently fold the cream cheese mixture into the whipped cream in three additions, mixing carefully to maintain the light texture.
  6. Pour the prepared cheesecake filling over the biscuit base and spread evenly using a spatula.
  7. Refrigerate overnight or for a minimum of 8 hours until the cheesecake sets completely.
  8. Slice and serve chilled.
